Do you know enchiladas? This famous Mexican dish made of tortillas, meat, vegetables and cheese?

It is a delicious and tasty dish that will definitely take you on a journey! 🌍

Well today, I am going to offer you a different version of this dish, because I am not going to add meat, but butternut squash.

In fact, I had some butternut squash left over from a previous recipe, but in small quantities, so I didn't really know what to do with it. Then, I had an idea: butternut squash enchiladas. 😋

You will see, it is rather very appetizing!

Here is the recipe for 4 people 👇

Ingredients

  • Âœ butternut squash,
  • 1 onion,
  • 4 wheat (or corn) tortillas,
  • 250g red beans,
  • A few drops of green Tabasco (jalapeno pepper),
  • 200g grated Emmental cheese,
  • 210 ml tomato sauce,
  • 1 teaspoon ground cumin,
  • 1 teaspoon paprika,
  • 1 pinch dried oregano,
  • 1 pinch coriander,
  • 1 clove garlic,
  • Salt, pepper.

Preparation steps

Enchilada sauce

Normally, for the sauce, you need chili powder. But since I didn't have any, I created a spice mix that's close to it!

You have to mix 👇

A teaspoon of paprika:

Preparing the vegetables

Tasting

This is a dish that is eaten very hot so that the cheese melts! It is comforting and very tasty thanks to the spices. We really felt like we were traveling. ✈

Well on the other hand, it is quite rich so you have to be reasonable on the quantities. The recipe is for about 4 people, or 2 meals if there are only two of you like us.

Et bien aujourd’hui, je vais vous proposer une version diffĂ©rente de ce plat, car je ne vais pas ajouter de la viande, mais de la courge butternut.

En fait, il me restait de la courge butternut d’une prĂ©cĂ©dente recette, mais en petite quantitĂ©, alors je ne savais pas vraiment quoi faire avec. Puis, j’ai eu une idĂ©e : des enchiladas Ă  la courge butternut. 😋

Vous allez voir, c’est plutĂŽt trĂšs appĂ©tissant !

Voici la recette pour 4 personnes 👇

Les ingrédients

  • Âœ butternut,
  • 1 oignon,
  • 4 tortillas de blĂ© (ou de maĂŻs),
  • 250g de haricots rouges,
  • Quelques gouttes de tabasco vert (piment jalapeño),
  • 200g d’emmental rĂąpĂ©,
  • 210 ml de sauce tomate,
  • 1 cuillĂšre Ă  cafĂ© de cumin moulu,
  • 1 cuillĂšre Ă  cafĂ© de paprika,
  • 1 pincĂ©e d’origan sĂ©chĂ©,
  • 1 pincĂ©e de coriandre,
  • 1 gousse d’ail,
  • Du sel, du poivre.

Les étapes de préparation

La dégustation

C’est un plat qui se mange bien chaud pour que le fromage soit fondant ! C’est rĂ©confortant et trĂšs goĂ»teux grĂące aux Ă©pices. On avait vraiment l’impression de voyager. ✈

Bon par contre, c’est assez riche donc il faut ĂȘtre raisonnable sur les quantitĂ©s. La recette est pour environ 4 personnes, ou 2 repas si vous n’ĂȘtes que deux comme nous.

Bref, j’espĂšre que cette petite recette revisitĂ©e des enchiladas vous a donnĂ© envie ! J’avoue que sur les photos, ça donne moins envie qu’en vrai
