Oh my gosh. I have outdone myself. I must say that I think this is the best cake/ batch of cupcakes I have ever made. Just look at how beautiful they are!!!
So, the process took three days, with my tiny oven that can only bake one layer or one tray of cupcakes at a time, but it was so worth it.
How yummy does this batter look? It's almost mousse-like. I ate .. a lot of it (hides face in shame lol).
As I was building the cake, I realized that either our oven, the counter, or the grilling tray inside the oven was not even... this was when I added the final 5th layer (Officially making it the biggest cake I have every made) and started the first layer of icing. I hope it doesn't fall over. How on earth we are going to slice it, I don't know ππ
I did a layer of icing last night
and then this morning I did the final touches on the cake, smoothing the icing using a butter knife and warm water.
I then crushed a packet of cookies (which are almost identical to oreos) and sprinkled the top of the cake and the cupcakes.
Next, I got @Aimeludick to help me with some piping before adding the strawberries and chocolate pieces. Don't you just love how the strawberries add such a lovely splash of color?
I added a heart-shaped cupcake to the top of the main cake and covered it with edible glitter, just making it even more glorious.
The wonderful thig about silicone baking trays is that the cupcakes are easy to remove and they don't require cupcake holders. They're easy to get out. They can be a bit wonky though, so put them onto a sturdy baking tray or oven rack before trying to move them around. Especially if it's still in the raw batter stage.
I don't know what I did right this time , but my failsafe bestest chocolate cake recipe of all time was even better than usual this time! It was o delicious. We may have lost one or two cupcakes to quality control :p I quadrupled the recipe so I had to use enough ingredients to make four cakes, essentially, or batches of 24 cupcakes.
For the icing, I used two 500g blocks of butter, two tins of caramel treat, about half a bottle of vanilla essence an 1kg of icing sugar. It smells and tastes AMAZING!
@zakludick is spending the day Sword and Board with friends and has taken some cupcakes with him. We'll dig into the cake as a family tonight!! YumYumYum!
