First up, Gazpacho made with all my own home grown tomatoes, herbs and cucumbers
It said 6 cups of tomatoes, and my blender is 6 cup, but to see my precious homey tomatoes disappearing into the maw of the machine just broke my heart, plus I didn't have all the exact ingredients, so this is "Gazpacho ala Heraldo"
There was suspiciously very little heat in that pepper
Following the "DieStructions" which said to reserve some of the chunky first stage, I added more maters and peppers then smoothed it all out.
↑This has been in the fridge for about 25 min while I continued cooking
I did not get any pics during the preparation of my first ever Squash Casserole, mainly because I was winging it, not having many of the things it called for
But after all my substitutions, it is now in the oven
I will give a report on the finished project. But I didn't have the makings for the topping in the recipe, so I adapted some old "herbed bread crumbs" I had in the fridge.
It called for Cheddar and Swiss cheese. I usually have cheddar, but not this time.
I DID have (and used) a goodly amount of Mozzarella (low moisture) and grated Parmegiano and Reggiano cheese, and I finished it with flaked slices of Parmesian cheese
Didn't get very brown on top, but it sure looks and smells good
