The obliging, super-reliable Mr. DDelivery came to my rescue a couple of times over a relentless December in my busy Lily's Cottage
Takeaway food can be so comforting and a real guilty treat, but I literally cannot stomach too much of it - mostly loaded with carbs, or if you order a salad, you find a bowl filled with lettuce leaves, and not very much else inside! The usual fare on offer - Burgers & Chips(Fries), Fish & Chips, Fried Chicken & Chips, Flame-grilled Chicken & Chips, Schnitzels & Chips, Wraps & Pizza (thank heavens, no chips!) etc. etc.
My son and his girlfriend visited for two weeks, and I so wanted to cook more homemade meals, but the BnB sapped way too much of my energy, so that did not happen. The girlfriend prepared some meals which was a real treat.
I managed a couple of cooked breakfasts - the usual English breakfast of bacon, eggs, fried tomato, and toast.
Other mornings we just grabbed our favourite cereal, yogurt, berries, or fruit.
One morning when in a huge hurry, I looked in the refrigerator and found a packet of chicken Vienna sausages, a big slab of cheese, and loads of eggs, so decided to make a French toast sandwich.
French Toast
We all know what this is - a slice of bread dipped in beaten egg and milk mix, and shallow fried. It can be served as a savoury, or a sweet breakfast dish. I serve it with a fresh tomato and onion sauce, or as a sweet treat sprinkled with sugar cinnamon, berries, and a dash of honey!
Some simply call it eggy bread.
I have no idea why it's French, nevertheless, it can be a lifesaver when in a hurry!
The Basic Ingredients
Quantities can be changed to suit your taste.
- 4 Eggs
- 50ml Milk
- 8 slices Bread
- Cheddar Cheese
- 6 Vienna Sausages
- 1 Tomato
- Diced Spring Onions
- Fruit Chutney
The How-to
Grate, slice, and dice - cheese, Vienna sausages, spring onions, and tomato
Loading the sandwich
Lightly butter one side of bread, and load the filling, cover with the other slice of bread.
Dip and Fry
Dip the sandwich in beaten eggs, and shallow-fry in hot oil on medium heat.
Turn when golden and fry on the other side.
Slice and serve
...at the breakfast table/ in front of the telly if it's weekend, or pack into a takeaway container to eat on the run!
