There's something magical when walking through the shopping mall, and the smell of popcorn comes wafting from the cinemas. It always takes me right back to the excitement of going to the movies as a teen!
When I was little, whenever we visited my Dad's Mom, my Ouma who spent her last few years bedridden. She used to whisper to me to look in her top drawer, as there was something inside just for me; it was our secret. Oupa of course was given the shopping list and was the one who put the sweeties there. Mom often used to quietly slip me a special treat when my four brothers were playing outside; being the only girl I was given a little tender care, not that it made any difference if I misbehaved!
Can I blame my sweet tooth on them? Nope, it's just what tickles my taste buds!
I know sugar is bad for one, but a treat now and then cannot do any harm, as long as you don't overdo it...as I sometimes do!
Enough rambling!
I needed something sweet to cheer me up today, and I hope it will sweeten your day as well.
Salted Caramel Popcorn is super easy to make and tastes way better than the mass-produced packets in the stores, and it's not as sweet.
You can make a vegan version by using plant butter, but I felt like real butter today, so here goes!
What do you need to make this treat for movie nights?
Salted Caramel Popcorn
- 250-gram Popcorn
- 250-gram Butter (plant butter also works well)
- 125ml Golden Syrup (I used half honey and half syrup)
- 500ml light Brown Sugar
- 5ml Salt
- 5ml Bicarb (Baking Soda)
What's poppin'?
Pop the corn in batches in a little oil in a deep pot, and divide between 2 large baking sheets.
Don't do what I often do by taking the lid off too soon, and finding a late popper popping right in my face, or landing on the other side of the kitchen:)
The salted caramel candy coating
Melt butter, syrup, sugar, and salt in a deep heavy-based pot over low heat, stirring continuously to melt the sugar crystals.
I know, I know, that's a load of sugar, and it is poison, as my son always tells me, but, it's just so addictive, as is this popcorn!
The salt breaks the sweetness in a good way. You can add a little more salt if you wish. I sprinkled a little extra on after coating the popcorn in the caramel coating.
Boil for approx 6 minutes on low heat, till it starts to caramelize, stirring from time to time so it doesn't burn.
Remove from the stovetop, add the bicarb, stir, and watch the caramel fizz up, mix well, and be careful you don't burn!
Pour over popcorn, and try to incorporate it into most of the popcorn, using 2 large spoons.
Bake for 15 minutes at 100°C, remove from oven, stir to cover as much popcorn kernels with the coating.
It's already starting to look better, right!
Bake a further 15 minutes after stirring, and stir again after removing from the oven.
Leave to cool and store in airtight containers; seal when 100% cool. I use large glass bottles.
Movietime, sit back, relax, and enjoy a bowl of addictive super delicious Salted Caramel Popcorn!
