How delicious! I couldn't think of a better way to use potatoes. The filling looks stunning.

Perfect for a light lunch or dinner. If we add wine as an accompaniment, even better.

You hit the nail on the head, despite potatoes being a carbohydrate, it wasn't heavy on the stomach at all, it was filling and delicious.
