It has been some time since I thought of making some biscuits. I think it must be the wintry weather that makes me want to have some comfort food. This is the recipe I followed which was simple to make and I can't remember where I got it from. :-)
Southern-Style Buttermilk Biscuits
2 cups of all-purpose flour
3 tablespoons of cornstarch
1 tablespoon baking powder
1/4 teaspoon baking soda
1 tablespoon sugar
1 1/4 teaspoon of salt
10 tablespoons of cold unsalted butter; cut into 1/2" chunks
3/4 cup of buttermilk, plus a little more if necessary
Preheat the oven to 425°F. and line a baking sheet with parchment paper.
*Note: I made a triple batch to freeze some for later use.
- Measure and sift all the dry ingredients together. Cut in the cold butter chunks with a fork or pastry blender until crumbly, similar to making pie dough.
- Add the buttermilk and mix together to form a dough ball.
- Roll out the dough to your desired thickness I kept mine about 1/2" - 3/4" thick.
- Using a cutter or glass, cut the rounds out and place them onto the parchment.
This tray went into the freezer and I vacuum-sealed them the following day.
I baked the remaining few for 15 minutes until they were golden brown and cooked through. Tonight, I will be baking a few more for my son and his family. I will see how much they like them, I know I did.
Until next time, this is Sunscape
