Today, I am going to share another Filipino dish I made for my family!
Chicken asado is a popular Filipino dish. It's a tomato-based stew with chicken known for its savory, sweet, and tangy flavor. The chicken is typically marinated in a mixture of soy sauce, vinegar (I used pineapple juice instead of vinegar), and other spices.
There are various ways of cooking chicken asado, depending on a person's preferences. Some cook it with chicken alone as the main ingredient, some with chicken liver, and some with veggies, and I opted to cook it with the veggies to make it healthier. So, here's how I did it.
Chicken Asado with Veggies
INGREDIENTS:
- Chicken
- Potato
- Carrot
- Onion
- Garlic
- Tomato
- Bell Pepper
- Bay Leaf
- Soy Sauce
- Pineapple Juice
- Knorr Liquid Seasoning
- Salt
- Sugar
- Tomato Sauce
- Tomato Paste
- Maggi Magic Sarap
- Ground Black Pepper
- Garlic Oil
- Lemon
- Garlic Oil
- Water
PREPARATION:
Wash the chicken thoroughly and marinate it with a mixture of soy sauce, pineapple juice, Knorr liquid seasoning, brown sugar, ground black pepper, lemon juice and bay leaf. You can also add a little soda, like Sprite or 7Up, to enhance the flavor, but it is optional. After marinating the chicken, cover the bowl or container and set aside.
Wash and peel potatoes. Slice or cut them and then soak them in water.
Wash and peel the carrot, cut into pieces to the size and shape you like.
Wash and cut the bell pepper into cubes.
Wash and cut tomatoes.
Just crush and peel garlic. No need to cut or slice them.
Set all the prepared ingredients aside.
COOKING TIME:
Heat some garlic oil in a pan or cooker. Pan fry the carrot and potato, and slightly pan fry the bell pepper, too, and then transfer them to a plate with a kitchen towel to remove some excess oil.
In the same pan with the remaining oil, sauté garlic, onion and tomatoes. Sauté them until aromatic.
Then, add some tomato sauce and tomato paste. Stir and mix them well, and let them simmer for a few minutes.
Add the marinated chicken. Stir to mix and combine. Then cover the pan and continue cooking at medium heat until the juice from the chicken meat evaporates. Then, add the marinated sauce and more water if needed. Then season it with a bit of salt, Magic Sarap, and liquid seasoning. Cover after mixing them and continue cooking until the sauce reduces.
Then add the fried carrot, potato, and bell pepper. Continue cooking for just about two to three minutes so the potatoes and carrots are still crispy and tender.
And that's it!! Our chicken asado with veggies is best served with rice and any fruit for dessert.
