How was your Valentine's Day yesterday?
Well, today, I wanted to share a sweet dessert since the Valentine's Day vibe still lingers around the corner. I made this yesterday for the family's dessert and snacks.
It is called "Banana Fudge. It is made from mashed ripe bananas (any kind of banana, like plantain, "banana lakatan," etc.). I used banana plantain for my fudge yesterday.

"Ube Banana Fudge"
INGREDIENTS:
♡ Banana Plantain (or any kind of bananas will do)
♡ Ube-flavored condensed creamer
♡ Slurry (1/4 cup cornstarch + 1/2 cup water), or it depends on the amount of your banana.
♡ Unsalted butter, margarine, or cooking oil
♡ Salt
♡ Vanilla Extract (optional)
♡ Any nuts or peanuts. You can also use some chocolates or cheese. (This is for the toppings and it really depends on your own choices.)
As for me, I used crushed peanuts yesterday but will try some other ingredients with this same recipe someday...😊
So let's prepare and cook now.
PREPARATION:
Peel the banana plantains and then mash them.
Crush some peanuts.
Open the can of Ube condensed creamer.
Make a slurry by dissolving cornstarch with water.
Then, prepare the butter, vanilla extract, and salt.
Let us start cooking now.
COOKING TIME:
Put on the cooker to medium heat. When it is hot enough, put 2 to 3 tbsp of butter until it melts.
Then, pour the mashed bananas gradually. Stir until it becomes light brown.
Add the ube-flavored condensed creamer. Continue stirring to mix well. Then add a pinch of salt and the slurry and continue cooking while stirring constantly.
Add some crushed peanuts and mix them well with the fudge. Put off the heat.
Then, transfer the banana fudge into a molder or any container that you like. Garnish some crushed peanuts on top. Let it cool down for a while, and then transfer it to the refrigerator.
And that's it...
This easy and simple banana fudge is rich and creamy. It is banana-liciously yummy. With just six ingredients, you can have this smooth and sweet bite of dessert or snack.
My family loved it, that's why I am planning to make another one with different flavors and toppings.
