Here is another simple dish that is very tasty and healthy that everyone should try. The dish is "Blue Scad Mackerel in Sour Soup with Sweet Potato Leaves". This dish only contains two main ingredients which are Blue Scad Mackerel and Sweet Potato Leaves.
Aside from Sweet Potato leaves other vegetables can be added to this dish like eggplant and okra but most of the time I only add Sweet Potato Leaves because it is the cheapest and it is the one that I prefer.
Also, aside from calamansi, or in the absence of calamansi, tamarind, and bilimbi can be used as an alternative to make the soup sour. This dish's cooking time is about five minutes to ten minutes. That is how fast this dish is to cook.
Most of the time this dish is cooked for lunch during cold/rainy season. Here's how to prepare and cook it.
Ingredients
- Blue Scad Mackerel (4 pieces, large)
- Calamansi Fruit (180 grams)
- Sweet Potato Leaves (30 grams)
- Ginger (small)
- Onion (red, small) - it is better to use red onion for this dish
- Salt
Preparing the ingredients
I just washed the calamansi with water and extracted its juice


I just peeled and sliced the onion


I just peeled and sliced the ginger


I prepared the sweet potato leaves
I prepared the Blue Scad Mackerel (I removed the stomach and the gills)
How to cook
1. Combine all the ingredients in a bowl except the calamansi juice and the sweet potato leaves, add some salt, and let them boil
2. When it starts to boil add the calamansi juice
3. Add the sweet potato leaves, the leaves will be cooked in a matter of second, then turn off the heat
4. Put some in a bowl and serve (it is perfect to be partnered with rice during the cold season)
