But I cannot help but wonder if a smokey version of this will not be good as well? Roasting some eggplants over coals for that smokey flavour, and adding some smoked paprika to it... Might as well try it out! Thanks for sharing another wonderful recipe that I will now add to my "Things I Need to Cook" list.

Oh my I am so sorry for the long wait. I had some rough weeks, where work really just piled up.
For sure, that is what the fiance and I always try to do. There has been a couple of times we failed, but we are still young and we are learning to do things better. Always learning is the best.
As soon as my life settles down even a small bit, I am going to try the smokey version, if I may be so bold to take your recipe as my base!
