There's something about the traditional Chinese steamed soup that makes it comforting to eat. I'm amazed that a simple bowl of soup has this healing effect that almost immediately made me feel better after finishing a bowl of it. The flavor is subtle and it tastes clean in a healthy way.
Tonight's dinner is at Food Republic's Steam Soup stall.
I ordered the Pork Ribs with Watercress. It's a good source of protein and dietary fibers too. The subtleness of the taste makes it feel like I'm sipping a herbal tea with a hint of savory meat to it. I guess, the deep green color of the soup is from the watercress that was steamed together with it.
The meat is tender and it has the look of a medium rare cooking temperature to it.
The big difference with the style of cooking is that the whole dish was steamed until it was cooked through. The bowl was placed in the steamer which is why they are using a bowl with thick sides so that it won't break.
Here's what the watercress looks like...
Some of you will be deterred by the color of this vegetable but trust me, it tastes much better than how it looks. This vegetable is versatile and it can be used for stir-fried dishes as well.
The leaves and the stem are already soft because of the steaming.
When stir-fried, the stems will have a subtle crunch to it. I enjoy having this vegetable paired with a variety of proteins but I like it the most when it is added to a soup like this.
