Squash pancakes is something easy to do, tasty and healthy and loved by my family very much.
I remember this dish in my childhood, and maybe that's the reason why I have so warm feelings to it;)
Pancakes can be not only sweet as dessert, but also can be eaten as a separate dish or a addition to soup or salad.
Now it's time of squashes, and we cook them in different variants
For squash pancakes we need:
- squashes (2-3 pieces)
- 2 eggs
- some flour
- spices, garlic, pepper, salt
- plant oil (I used avocado one)
Squashes should be peeled and blended carefully. Then we add all other ingredients.
We'll get something like "veggie dough", and we can cook them as pancakes on a frying pan or in the oven.
I chose the 1st variant.
Just 10 min, and they all are ready!
They taste better with some sauce but I do like them just in their classical variant.
In summer it's a perfect snack and good alternative to bread.
