Welcome back to my food blog, Today i would like share the recipe of Sabudan Khichdi,is commonly prepared in Indian during the fasting season of Navratri, I love Khichdi so I don't wait for the fast. I make this most of the time. It's a simple dish yet so flavorful. It's also vegan and gluten-free. Sabudana Khichdi is made with sago pearls(sabudana)! Making this khichdi requires some tips to ensure that the sago pearls do not stick or turn into a lumpy mass, soaked the sabudana in water to a avoid the stickiness of it. Like I told you earlier that I eat it during fasts and also for breakfast at other times and capsicum is my favorite vegetable, so I also added capsicum in it so that it becomes more tasty and delicious.
It is rich in carbohydrates and protein obtained from peanuts. Sabudana is rich in carbs, and hence this dish makes a filling breakfast.

The ingredients
• 2 cup of Sabudana Sago.
• 2 Medium size boiled potato.
• One Medium size chopped Tomato.
• 3 tbsp of chopped coriander.
• 1 tsp of lime juice adjust to taste.
• 2 tsp of oil.
• 1/2 tsp of cumin seeds.
• 2-3 green chillies.
• 1 tsp of Grated Ginger.
• 1 small size Capsicum.
• 4 tbsp of Roasted Peanut.
• Salt to Taste.
• 1 tsp of Red chili powder.(optional)
Process
Step 1. Wash and soak the sabudana pearls for 1 hour, it will absorb water and swell up quite a bit
Step 2. Drain the water completely with the help of Strainer.
Now your sabudana is ready for cooking
Step 3. Take a pan, heat the oil, then add peanuts, in low flame roast it for 2 minutes, keep it aside.
Step 4. Heat oil and add the cumin seeds,When they sizzle and turn a light brown, then and add green chilli and capsicum & Tomato, saute it for 2 mintues in low flame, untill the tomato cooked.
Step 5. Now add the potatoes,Saute until the potatoes turn a light golden brown.
Step 6. Add the soaked sabudana, turn heat to low Stir continuously and let it heat through. Keep Mixing untill the The sabudana will turn translucent.
Step 7 Add Roasted Peanuts,lemon juice, and salt. Again Mix it well.Turn the heat off and add chopped coriander leaves.
Sabudana Khichdi is ready to Serve...
