On the left are some cucumbers I 'put up' several days ago, simply heated vinegar and a few spices and poured over the sliced veggies in the jar, then pulled out the air using my new pump

On the right are some banana peppers I put up TWO YEARS AGO, the same way but without the vacuum pump
This morning, I found another ENORMOUS cucumber, (they hide from me until they are simply too big to hide any longer)
So I decided to make "Bread and Butter" pickles for a change
Bread and Butter refridgerator pickles
Ingredients
5½ cups (680 g) pickling cucumbers, sliced ¼-inch thick , about 1½ pounds
1½ tablespoons kosher salt
1 cup thinly sliced sweet onion
1 cup (198 g) granulated sugar
1 cup (240 ml) white vinegar
½ cup (120 ml) apple cider vinegar
¼ cup (53 g) light brown sugar
1½ teaspoons mustard seeds
½ teaspoon celery seeds
⅛ teaspoon ground turmeric
I went to the store to get what spices I didn't have already, then I sliced the cucumber in half, deseeded it, then sliced it up (peeling half once I ate a slice and saw how tough the peel was)
Following the "Diestructions" I sprinkled them with salt while I put together the pickling liquid
Combine the granulated sugar, white vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds and ground turmeric in a medium saucepan; bring to a simmer over medium heat, stirring until the sugar dissolves.
I diverged from the Diestructions, in that I included some pepperoncini rings and rather than pouring over the cukes in the bowl, I stuffed the jar and poured it directly into the jar.
I pulled the air out while it was still hot
I will give you an update in a few days on how they taste.
