For today's blog I would like to share with you simple yet nutritious recipe - Egg and Rice Omelet with Carrots and Spring Onions. As a mom every day is a challenge what food we prepare every meal for our children. We always want to serve meals not only delicious but ensuring the food we give is healthy and nutritious.
Yesterday I made this easy and quick omelet recipe. Feeding vegetables to children is quite struggling. As a mother I find creative ways to incorporate veggies into their meals. I am glad my toddler loves the dish. The best part my daughter didn't notice the carrots, she always complaining if I want her to eat vegetables. I believe when we mix the veggies to their favorite food we cannot heard complain and they will enjoy the food.
This recipe is a budget friendly we can use leftover rice from last night's dinner. This is one way to reduce food waste and great way to repurpose it into something tasty.
What to prepare?
2 eggs
1/2 cup of rice (leftover is okay)
1/4 cup grated carrots
Handful of chopped Spring onions
Salt and pepper to taste
1/4 cup oil (for frying)
Cheese can be added to enhance the flavor but optional
Any veggies will do to incorporate like moringa or squash
Instructions:
1.In a bowl beat the eggs
2.Add the cooked rice and mix well
3.Add the grated carrots and chopped spring onions
4.Season with salt and pepper, make sure all ingredients are well combined
- In a frying pan heat the oil, pour the mixture and spread evenly in a medium heat,
- Let it cook for few minutes until golden brown and carefully flip it over to cook the other side.
- Once fully cooked removed from the pan and serve warm.
