Don't underestimate vegetables that are actually important for body nutrition.
Some people may think that vegetables are disgusting like grass. Maybe it could change the opposite, someone becomes a vegetable lover when they are faced with a health problem.
I am grateful to be someone who has liked vegetables since long ago without having to try extra hard for it. My husband also likes vegetables since childhood just like me. It's like great luck because it will be easier to prepare dishes with people who have the same taste.
Then, what about you? As we get older and our bodies need more nutrients from vegetables. In fact, constipation cases will increase when we skip eating vegetables or eating fruit. Have you also felt the impact of not eating vegetables?
Broccoli, I always put broccoli at the top of the list of nutritious vegetables. In fact, even though it is the most expensive vegetable besides asparagus. So, as much as possible I will buy broccoli because it is also my favorite and my husband's favorite.
Besides broccoli, I also like baby corn. You may also often read my cooking blog about recipes that use baby corn ingredients. Baby corn has a very crunchy texture even when cooked. So I often use baby corn as an additional combination of other ingredients.
This time, I will cook for two meals, namely for breaking the fast and for sahur. With a total of 4 servings.
I use minced chicken for this dish mixture but you can also replace it with tofu or something similar.
From the beginning of the blog title I promised that this dish would be easy to cook. That's true, but it just takes a little effort to cut the broccoli and baby corn. Cutting vegetables, also onions are the main activities that are part of cooking. So don't complain about that activity. :)
THE INGREDIENTS
- 250 grams minced chicken
- 200 grams of broccoli
- 200 grams of baby corn
- 1 celery stick with leaves
- 5 cloves of shallots
- 5 cloves of garlic
- 1/2 teaspoon of salt
- 1/2 teaspoon of sugar
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground pepper
- (optional) chilies or you can replace chili with paprika
COOKING INSTRUCTIONS
STEP 1
Cut the broccoli and baby corn into small pieces. Don't throw away the broccoli stalks because they are also delicious cooked. It's just necessary to remove the tough and fibrous outer skin of the broccoli stalks.
STEP 2
Boil enough water with a pinch of salt. Then, blanch the broccoli and baby corn for 3 minutes.
Then, remove and drain. This method is done to save more cooking time later and beautify the color of the broccoli.
STEP 3
Heat a little oil. Stir-fry the chopped onion until fragrant. Then continue by adding sliced chilies.
STEP 4
Add the minced chicken, then stir well. Stir-fry until the color of the minced chicken turns brown. Add a little water if you are afraid of burning it.
STEP 5
Add the baby corn and broccoli that have been blanched. Also add all the seasonings: salt, sugar, ground pepper, ground coriander. I added another 200 ml of water as requested by my husband who likes a more soupy dish.
Stir well, cook until the vegetables are cooked, or about 3-5 minutes more. Then remove and ready to serve.
THE RESULTS
The result is appetizing to me! Of course, I have to restrain myself until it's time to break the fast. And later, I don't need to cook anymore for sahur, and only need to heat this dish for a while.
Actually, this dish is very spicy because we like spicy food ehehe. But chili is an ingredient that you can leave out if you are not used to it and it does not affect the taste at all. Well, until next time on my other recipes.
